The queen of Italian wine Barolo graced Alibi, a modern restaurant tucked inside Cordis hotel. To welcome her and our prestigious WOL members, we curated a highly exceptional dining experience which featured flavour-packed dishes with European and Asian influences together with exquisite wine pairings from Italy.
Celebrated British chief James Oakley rounded up some of our favourite royal-inspired recipes to craft a menu that consisted of fresh oysters, maple-glazed smoked pigeon slow-cooked to perfection, decadent 70% dark chocolate cherry flourless chocolate cake and more. Our guests enjoyed this delightful assortment of dishes in a relaxed atmosphere while taking the city's hustle and bustle from above. Incredible food, wine, romance, views—they're all here at Alibi.
The gorgeous Italian wine – Barolo complemented and elevated the complexity of the menu. This delicious red wine is uniquely sourced and produced from Nebbiolo grapes a small, thin-skinned red grape that has a strong presence of tannins. Nebbiolo is named for the hazy mist that drifts over the hills of Italy’s northern Piedmont as the perfume of fermenting wine and fall truffle fills the air during harvest season.
We captured the exceptional vintage scent and flavours in seven Barolo wine labels for our guests at this special dinner – highlights included the 2 Barolo from Moscone – Cantina Moscone Barolo D.O.C.G. 2015 and Cantina Moscone Barolo D.O.C.G. Bussia 2014. The rich and silky textures, along with warmly fruity scents allowed the mineral and salted notes of the oysters’ flavour of oysters to shine through. The complex and elegant aromas dried rose petals, cherry, wild strawberries followed by spicy and ethereal hints perfectly balanced the soft textures of the smoked pigeon and sweetness of maple glaze.

WOL partnered with Asia’s first digital wardrobe PAKT and renowned Cantonese restaurant Ming Court to bring the most fashion-forward members on an immersive Fashion Meets Culinary experience where they learned the latest fashion trends, wardrobe management tips and savoured gourmet Chinese Dim Sum dishes and desserts on July 12.
